Ginger is a tropical spice with a pungent taste widely used in cooking and baking.

Its principles, among which the gingerol, not only determine its distinguished aroma, but also have powerful health benefits for stomach aches, nausea, and diarrhoea for example. Although ginger is native to South East Asia, it is now cultivated in many tropical and semi-tropical areas, including West Africa, India, Australia, Japan and the Caribbean. The countries in West Africa are not large producers, however, they grow a ginger with a very high level of gingerol and an intense fragrance and flavour.
